Watermelon Cakepops

Every year my family takes a week vacation during the summer; it’s not anything fancy, we just rent a lake cabin and relax, but isn’t that what vacation is all about? We usually have a pretty great time together and these cakepops started a tradition that probably won’t die for a while. Cakepops every summer!

Each Watermelon was made with yellow cake, dyed with red and pink food coloring to resemble the inside of a watermelon, stuffed with mini chocolate chips to resemble watermelon seeds, dipped in dark green candy melts and decorated with light green candy melts to resemble the lines of a watermelon.

Every cakepop I have ever made has always turned out delicious, but these watermelon lines turned out horrid. If I were to make these again, I would do two things different: I would pipe the watermelon lines, not try to paint them with a paint brush, and I would add more chocolate chips. I specifically only added 3 mini chocolate chips to each Watermelon so they wouldn’t be too overpowering, but they weren’t even close to doing that and you were lucky if you bit one just right to see a chip… I wouldn’t put any less than 5 per cakepop next time.
